These Tarts which are deliciously sweet and yet slightly savoury, light and crisp yet unctuously soft in the middle, require a careful balance of the finest ingredients
and the lightest hand to make, still made to our secret recipe. ‘Maids of Honour are finest when warmed in a moderate oven’ (150° Gas Mark 3) for 5 to 8 mins. Place onto a warmed baking tray or wire rack.
Devour when cooling from the oven, deliciously warm.
